Long ago, all email was created in plain text only. There was no other option for HTML, the emails sent and received were boring, plain and quite ugly looking. Today, thankfully, there is the option of HTML email creation. HTML email makes a lot of things possible. It allows for the creation of a much more effective design compared to text email. It gives you the option to have color in your email. It allows you to include images. Ads are also much more compelling in HTML email than those in text emails.
